Mushroom drying temperature control:
① Preliminary drying period: The starting drying temperature should be controlled at 35 ℃ and dried for 3-4 hours. Generally, the temperature increases by 1-2 ℃ per hour and gradually rises to around 40 ℃. ② Constant rate drying period: After drying for 4-5 hours, the temperature gradually rises to around 50 ℃, with an increase of about 2 ℃ per hour. This stage usually lasts for 3-4 hours.
③ Drying period: After drying for 8-9 hours, the temperature should gradually rise to 55-60 ℃, and this stage is usually dried for 1-2 hours. ④ Complete drying period: The temperature should be controlled between 60-65 ℃ in the last hour. ⑤ The dried shiitake mushrooms should be packaged in a timely manner and stored in a low temperature, dry, and dark place.
