Fig Drying Parameters
Temperature: Set to around 60-65°C
Drying Time:
Initial Stage (approximately the first 3 hours): The figs will become noticeably softer and emit a rich, sweet aroma. This is due to the evaporation of a significant amount of water.
Mid-Stage (approximately 3 hours): The figs will begin to wrinkle, shrink in size, and become more firm to the touch.
Late Stage (approximately 4 hours): It's time to check the figs. After cooling, remove a piece and touch it. It should feel dry, firm, but not sticky, with a leathery texture. When folded
in half, the flesh should separate easily (still springy, not brittle).
Fig drying about 10 hours per batch, at about 60-65 degree.
