Drying process of morel mushroom:
1、 Early drying stage
Fresh morel mushrooms are harvested and cut into different lengths, then evenly placed on a baking tray. The baking tray is pushed into the drying room and the drying temperature is set above 35 ℃. Low temperature drying can give the morel mushrooms a good shape and color, making them full and selling at a good price.
2、 Heating and dehumidification stage
Adjust the drying temperature to within the range of 40 ° C~45 ° C, reduce the humidity to 55%, and dry for 2 hours. At this time, the appearance of the morel mushroom shrinks and the moisture content significantly decreases. The next step of drying can be carried out.
3、 Strengthen the drying and dehumidification stage
At this point, the temperature rises to around 50 ° C and the humidity is set at 35%. Continue drying for 2 hours.
4、 High temperature drying stage
The temperature rises to 53-55 ℃, the humidity drops to 15%, and the morel is thoroughly dried.
5、 Rebound softening
After the drying of morel mushrooms is completed, they can be left to stand in the air for 10-20 minutes to slightly soften the surface. If bagged directly, the dried morel mushrooms may become too hard and brittle, leading to brittle breakage and affecting quality.
