Plum dryer
① Choose fruits with medium fruit shape, thin skin, small kernels, dense flesh, less fiber, and fully mature.
② Alkaline soaking: To remove the wax from the fruit skin and accelerate drying, alkaline soaking treatment is required. Soak the fruit in a solution of sodium hydroxide with a concentration of 025% -15% for 30 minutes. The soaking time should not be too long to avoid cracking or peeling of the fruit skin.
③ Rinse: Rinse with clean water to remove alkaline solution.
④ Cut in half and remove the stones: Use a stainless steel fruit knife to cut the fruit into two halves along the suture line and remove the stones.
⑤ Drying: Lay the raw materials on a drying tray according to their size and place them in the drying room. The initial temperature is 45-55 ℃, and the final temperature is 70-75 ℃. The drying time is 20-26 hours, and the middle is flipped once. Be careful not to spread the raw materials too thick.
